Our Deepest Sympathy
The community mourns the loss of one of our residents. Elaine Des Roches passed away on July 4th after a lengthy illness.
Audy and Elaine moved to Foxboro in the spring of 2000 and since they spent winters in Florida, we all did not get to know Elaine. However, all who did know her, here and in Florida, enjoyed a friendship with a thoughtful, considerate and generous lady. Elaine had a very considerable talent as an artist and had produced some excellent paintings.
We offer our sincere condolences to Audy and family and a donation has been sent to the Grand River Cancer Centre in Elaine's memory.
A message of sympathy to Marg and Doug Wendland and a donation to the Stratford Hospital Foundation in memory of her mother who passed away unexpectedly on July 21st.

A basket of fruit and a card were delivered to Jan Price following her recent hospital stay; a card and flowers to Sylvianne Leclair after her surgery and a thinking of you gift to Jim Cook who had the misfortune to break his leg recently. Best wishes to you all !

TENNIS CLUB NEWS Ralph Adsetts
Our tennis court has seen more activity this season with two or three new players at the morning Round Robin and also with the introduction of three tournaments.
Unfortunately the hot weather has kept many pairs from playing their matches. Congratulations to Marg. Joiner and Bill Wills for playing 5 out of the 7 matches for the eight couples draw and winning three of them; also to Bob Joiner and Russ Wilson for playing 4 out of the 7 and winning all four of them. In the men's, four couples draw, Bob Joiner and Bill Wills played all three of their matches and won them all.
In the ladies four couples draw, Marg Joiner and Ellen Walker played two of their matches and won one. Carol Cameron and Marg Harris played two despite the heat, so congratulations to both of them.
On Thursday evenings at 7 pm., a new group of Absolute Beginners are having a lot of fun and learning how to play tennis at the same time. There is room for more.

COMPUTER CLUB NEWS Ralph Adsetts

The computer club meets every Tuesday at 7pm. On most evenings we have a turnout of twelve or more semi -literate computer students eagerly watching, and listening to our four resident "experts".
For the last six weeks special emphasis has been put on the basics and our teacher has been Jeanne Malich. George Walker, Ron Bleier and Arnold Muma have conducted special interest demonstrations to let us see some of the possibilities of the computer in conjunction with the video club. Arnold Muma and Ron Bleier have shown us something of the way photographs can be filed on the computer and speedily recovered.
Exciting times are ahead; we have now been given permission to install a computer cabinet in the corner. Also, we are to have a new, state of the art computer, which can do everything but fly. This machine will be available to everyone and you will not need flying lessons to operate it. You owe it to yourself to explore its possibilities, so if you are not a member of the Computer Club, join us on Tuesday nights at 8pm in the lounge.

Salon Doors
The exterior doors of Salons A and B have had an anti-glare coating applied to the glass that should cut down glare and heat from the sun.
Maintenance
The touch-up painting throughout the Centre and drywall repairs in the dressing rooms are almost completed. Drywall repairs beside the southern pool windows will be done in the Fall.
Draining and cleaning of the pools, replacement of the filter sand and steam cleaning of all carpets will also be done in the Fall.
Rental Policies
The Recreation Centre Committee has decided that there will be no charge for funeral receptions for residents.
Members of the Recreation Centre Committee have been asked to poll their condos on the question of restricting Recreation Centre rentals to internal community and family functions hosted by a resident.
Pool Closing
Please note that the pool will be closed for cleaning Friday, August 23rd 8 a.m. to 1 p.m.

The next meeting of the Committee is scheduled for Tuesday, September 3rd at 9:30a.m. in Salon A.

GROUNDS COMMITTEE Cam Magnan
The Grounds Committee wish to thank all of the residents who took the time to answer the Opinion Survey. We have received 171 out of a possible 215. This gives us a good cross section of how the community feels about many items. This will help us in planning future activities. We will provide a summary of the results in August. The majority of the responses were quite positive with constructive suggestions. There are a few residents however, who do not have any appreciation of what is involved in maintaining our property. We have over 30 acres of park land, 5 acres of ponds, 6 kilometres of walking paths, 12 acres of bush and 637 free standing trees. A responsible maintenance program is not a trivial undertaking. You cannot reasonably expect expenses to never increase. The budget for the next fiscal year will be presented at the August Board meeting. Supporting details for proposed expenditures will be included.
The geese are starting to increase in numbers as they always do at this time of year. We have over 100 now. It is time for Collie Wildlife Control to start discouraging them.
We have had quite a bit of tree maintenance this year. The late July storm did some damage. Many of our trees were already in trouble. The combination of the ozone depletion, the acid rain from air pollution, and increasing numbers of insect types are putting the trees under severe stress. Southern Ontario has increasing numbers of trees dying each year. We have a company called Tree for Life looking at what they can provide for us with respect to a tree management program to improve the health of our trees. With our large number of trees, keeping them in good health requires a significant effort.
With respect to our ponds, there are no ready-made off-the-shelf solutions. We are working with four different pond companies to see which one of them comes up with the best, long term pond management program to meet our needs. We have received a permit to allow some treatment this year. We are deciding on what the most cost-effective action is at this point in time. If any residents have prior pond management experience, I would like to talk to them. Please call me at 634-9850.

SERVICE AND EQUIPMENT Bill Simpson
Subject to the approval of the Board of Management, the writer has recently been appointed convener of this committee. While I have been a member of the committee since it's inception as a split-off from the Grounds Management Organization, it may take a little while for me to focus on what should be our priorities. The following are the main areas of our mandate:
1. Streets and streetlights, which includes the responsibility for snow clearing.
2. The home irrigation system
3. The paths, including the boardwalk at the head of the lake
4. The waterfall
5. Structures in the community other than the Rec. Centre
These will assist us in focusing on what should be our priorities, if we have input from the community on what needs upgrading and fixing. The survey recently undertaken by the G.M.O. greatly assisted them in this regard, particularly in formulating a budget to finance the needed tasks. Budget considerations are currently underway by the Finance Committee for the ensuing fiscal year, and there is therefore not sufficient time for a survey to be completed.. However, we will still appreciate your input. You may contact me by letter or note dropped off in the S& E committee slot at the committee mail slots section near the photocopier, or by E-mailing me at [email protected].
We also need to receive feedback on the recently revised watering guidelines. For this to work, we need the co-operation of all our residents to adhere to the guidelines. Also, notwithstanding that we have our own "in-house" irrigation system, as you have no doubt been reading the recent articles in the record, the current drought conditions have impacted on the water table and water users in the Grand system are being asked to reduce water use by 10%. It also helps if we curtail all lawn watering during the heat of the day i.e. 10a.m. to 7p.m. as much of this water evaporates before sinking into the ground.
Residents are no doubt pleased to see the waterfall reactivated and we apologize for the delay. In view of the expense in replacing the pumping unit, it was necessary to call for bids, and then for the successful contractor to order and eventually install the new unit.

INFORMATION FOR ALL RESIDENTS
Some residents think that the Fox Talk appears magically the first of each month. Many residents do not realize the amount of work that goes into producing the Fox Talk and what the people behind the scenes do. For those that know (former editors and anyone that has dropped by) we thank you for all the support, help and understanding that you have given.
The following is a short diary of what goes on behind the scenes.
The process starts with a reminder that is sent out the 20th of each month to those people that have sent articles on a regular basis. (If you would like your name placed on our reminder list, please notify Jeanne Malich at [email protected] or call 634-8142). Since there is more than one person working on the Fox Talk, it is necessary for all articles to be sent to the Fox Talk e-mail address [email protected] or placed in the mail slot at the rec. center. We ask that you do not give an individual the information, as there are procedures in place that we as editors must follow. These procedures are designed so those articles are not lost or misplaced. There is a designated person each month that is responsible for collecting the submissions. These are then handed over to the staff members that will do the layout of our newsletter. On the 26th our work begins and could take 2-3 days for everything to come together. Our new printer has performed marvelously in printing out the front page in record time. Where it used to take 4-6 hours on a good day, it now is done in less than an hour. Now the pages are sent to the first proofreader and then returned. Corrections are done and delivered to the circulation staff for the final proofreading. If it is a go, it is then copied and collated for distribution. Throughout the month, information is collected for the monthly calendar and two people are responsible for updating the information. Our food editor has been pulling his hair out trying to keep his recipes in the allotted space without everything moving all over the page. Your comments and ideas are always welcomed. Anyone wishing to submit a front-page article for consideration may do so by using our email address [email protected] or depositing it in the mail slot at the center. For those of you who have submitted articles, we thank you. These articles will be keep on file for possible future use. Please remember that all submissions will be edited.

Grilled Tenderloin with cognac
We are now in the middle of barbecue season.
I have a scrumptious crowd pleasing recipe. It is Grilled Tenderloin with cognac.
Serve with a nice salad,
Garlic Cheese Toast and a baked potato.
Garlic Cheese Toast 2 TBSP parmesan cheese
2 TBSP mayo
1 clove garlic minced
1/2 tsp dried oregano
1/2 small red pepper chopped fine
In a small bowl, stir together all ingredients and spread evenly over thinly sliced French bread. Broil on baking
Sheet 2 - 3 minutes.
Grilled Tenderloin with Cognac
1 beef tenderloin ( 2 - 3 lb )
2 TBSP Dijon mustard
1/4 cup peppercorn
1 TBSP Worcestershire sauce
1/3 cup cognac 2 tsp lemon juice
1 cup whipping cream
Coarsely crack peppercorn, sprinkle on roast and press into surface.
Put drip pan in grill. Cover grill and cook,
turning once until meat thermometer registers145F.
When roast is grilled, Warm cognac in skillet on top of range
Remove from heat, place roast in heated skillet. Carefully ignite with match, allow flame to subside, carefully
spooning cognac over roast.
Remove to platter. Reserve juices. In saucepan on range, combine cream, mustard
and Worcestershire sauce.
Bring to boil. Cook and stir 3 minutes over med low heat until slightly thickened
Remove from heat and stir in lemon juice and reserved cognac. Carve roast and pour sauce over.
