Another on my to try list.
2 1/4 cups all purpose flour
1/2 cup sugar
1 1/2 to 2 teaspoons ground ginger
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed ripe banana (2 to 3 medium bananas)
1/2 cup margarine or butter
1/2 cup molasses
3 eggs
1/2 cup chopped walnuts or almonds
Combine 1 cup of the flour, the sugar, ginger, baking powder, cinnamon, baking soda, and the salt in a large mixer bowl. Add mashed banana, margarine, and molasses. Beat with an electric mixer on low speed till blended, then on high speed for 2 minutes. Add remaining flour and eggs; beat till blended. Stir in nuts.
Divide batter among three greased 5 1/2x3x2 inch loaf pans. Bake in a 350 degree oven for 40 minutes or till a toothpick inserted near the center comes out clean. Cool in pans for 10 minutes on wire rack. Remove from pans; cool thoroughly on wire rack.
