FALL 2002
at

PINERIDGE SECONDARY SCHOOL, PICKERING, CANADA

I have been cooking for over 12 years mostly for friends and family. In 1998 I ventured into the world of teaching with my first class at Exeter High School in Ajax, Ontario, Canada. Since then I have developed a passion for food and an affinity for passing on what I know to my students: the simple and easy way to create and enjoy good food -  food which is full of flavour, taste and satisfaction.  In this course I bring the tastes of Indian and Caribbean Cooking together in one cooking course. The influence of Indian and Chinese Cusine in the Caribbean came in the early 1800s and has blended into its own version with a distinct taste and flavour.  This Food is bright and colourful, with plenty of character supplied by the heat of scotch bonnet peppers, aromatic herbs, and dry and fresh spices. This course is a fun way to learn new cooking skills and make new friends. A maximum of 12 people per class means that you get a real "hands-on" experience creating restaurant quality food.  Also included are an array of handouts of recipes, pantry basics, hints and tips and shopping sources.  Besides cooking classes, I do party catering and personal chefing, creating personalized meals to fit your taste and budget.
