Oriental Chicken with Clementines

This mouth-watering recipe comes to us courtesy of the Detroit News...

Ingredients

2 tbsps. peanut oil
1 lb. boneless, skinless chicken breasts (cut into strips)
1/2 cup of sliced scallions
1 tbsp. minced garlic
1 tbsp. cornstarch
1/3 cup soy sauce
3 tbsps. rice wine vinegar
2 tbsps. honey
1/2 to 1 tsp. chili paste
1 cup fresh snow peas
2 peeled and segmented clementines
Optional cashews for garnish

1. Heat oil in a large skillet over medium heat.  Add chicken, stirring constantly until cooked (3 mins.)

2. Remove chicken to a bowl and cover to keep warm

3. Add scallions and garlic to skillet and cook, stirring constantly (2 mins.)

4. In a cup, combine cornstarch with 1/4 cup of water and stir into skillet with vinegar, soy sauce, chili paste and honey.

5. Bring to a boil, reduce heat to moderate, simmer a minute.

6. Return chicken to skillet with snow peas and clementines.  Heat through.

7. Garnish with cashews for a nice touch.  Serves 4.  Tastes good.
