Spirit Glaze for Ham

Also known as Maggie’s Drunk Ham

Combine:

1/2 to 1 cup dry red wine
1/2 to 1 cup of bourbon (Jack Daniels or a cheaper variety of Sour Mash Whiskey works well) The amount of liquor you need depends upon the size of the ham and the required baking time. The bigger the ham the more marinade.
1 cup brown sugar
10 cloves
grated peel of one orange

Mix all ingredients and blend well. If desired, marinate the ham overnight before baking.

Bake in a 350 degree oven and begin basting after about 20 minutes. Allow some of the marinade to caramelize on the bottom of the pan. As you near the end of the baking, periodically deglaze the pan with water to assure that you that you will have sauce for the ham. (It’s also great for heating the ham for ham sandwiches later!)

This recipe is based upon the Spirit Glaze for Ham from the original Joy of Cooking. You know, the one you have with the cover falling off and all the food stains.
