Mallory & Maggie’s Banana Bread

1 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoons baking soda
1/4 cup of butter or margarine, softened
slightly less than 1/2 cup sugar - especially if the bananas are really sweet
1/4 cup of fake eggs or one large egg (we always use the fake ones)
1 teaspoon vanilla
4 fully ripe bananas
1 cup whole bran cereal (like All-Bran)
1/2 cup raisins

Preheat oven to 350. Grease 9x5x3 loaf pan ( I use the spray stuff & it works fine).

Mix flour, baking soda, baking powder and set aside.

In the large bowl of an electric mixer beat butter & sugar until smooth and fluffy. Add vanilla and egg and mix well.

Peel bananas and mash with a potato masher. (This is one of Mallory’s favorite parts.) Mash until all large lumps are broken up. Add to the sugar and egg mixture and stir until well mixed. Add flour mixture, bran cereal and raisins, beating just until smooth.

Spread into prepared pan and smooth with the back of a spatula. Bake on the center rack for 60 minutes or until a toothpick inserted in the center comes out clean.

When bread is done, place bread on a wire rack and cool for about 10 minutes. Remove bread from pan and transfer to wire rack. Let stand until completely cool. (yea, right!)

To store, wrap tightly in aluminum foil and place in a plastic bag.

It’s great sliced and toasted for breakfast!
