Grilled sweet potatoes, chilli salmon & Stir-fry vegetables

Ingredients
- 2 Peeled Sweet potatoes (150g per each)
- 4 Salmon
- 2 Cups broccolini
- 1 Cucumber
- 2 Mixed peppers
- 1 Teaspoon of crushed garlic
- A Pinch of Salt
- 1 Chopped onion
- 1 Teaspoon Cumin seeds
- 1 Leek stalk
- A few parsley sliced
- Canned coconut milk (1/2)
- 1 Teaspoon of Fish seasoning
- Olive oil
- 1 Teaspoon of Thyme
- 1 deseeded Crushed Scotch bonnet
Instructions
Sweet potatoes and chilli Salmon:
- Set oven at 200C,to warm up the oven
- Carefully slice the potatoes thinly into desired shape
- Mixed together the potatoes with cumin seeds, 1 tablespoon of oil, and salt inside a big bowl.
- Transfer the potatoes into a lightly greased oven tray.
- In a clean bowl, mix togther all the seasonings + a tablespoon of oil
- Add the fish into the bowl, and with your hands rubbed in the seasoning mixture,and transfer into an oven dish
- Place both the sweet potatoes and fish into the oven for 15-20 minutes.
Stir- fried vegetables with coconut milk
- Finely slice all the vegetables separating each into a separate bowl
- Heat up a wok, add 1+1/2 table spoon of oil.
- Sautee the onions together with crushed Garlic,chopped leek then followed with the finely sliced vegetables
- Slowly pour the coconutmilk into the wok, and cover with lid and simmer for 2-5mins.
- After the 20 minutes is done, plate up the food, sprinkle the chopped parsley to add taste and Enjoy!
