Calico Beans Recipe - Serves 30 to 40 people - Courtesy of Floyd Opelt

1 gal.   Bake beans [Bush Best Original with bacon, maple syrup & brown sugar
1 lb.     Bacon [fried, drained and crumbled]
1 lb.     Hamburger [browned and drained]
1 cup   Brown Sugar [dark]
6 oz.    Molasses
1 tbs    Vinegar
1 tsp    Dry Mustard
1 cup   Onions [chopped]
1.5 cup Ketchup
1 lb.      Kidney Beans
1 lb.      Butter Beans

Bake at 350 degress for about 40 minutes.
Flavor good if made the night before and reheated.
May add garlic salt, hot sauce, mixed spices and more maple syrup if desired.
Jalapeno Cornbread Recipe -  Courtesy of Frank Gorishek

2 boxes Jiffy Cornbread Mix
or Yellow Corn Muffin Mix
2 eggs
Amount of liquid state on the boxes of Cornbread Mix
1 cup grated Cheddar Cheese
1 small can creamed corn
2 tbspns sliced jalapenos, cut in pieces [use more or less to taste]

Preheat oven to the temperature stated on the box of mix.
Make the mixes according to the package directions.
Add the other ingredients.
Bake according to directions on the mix box, adding 10 minutes to the time.
Brine for Smoked Fish -- complements of Bob Roseen

3    Quarts water
1/2 Cup Brown Sugar for each quart of water
1    Cup of Salt for each 3 quarts of water
1    Cup of Burgendy Wine for each quart of water

Blend ahead of time and soak your fish at least 3 hours before smoking.

This amount will do 20 lbs of fish... Alter according to your needs.

This recipe will do 40 or 50 bluegills... 40 if they are the size Fred catches...

12 oz         Beer
3   drops   Tabasco
1 1/2 tsp    Salt
1 tbsp        Lemon Juice
1 clove      Garlic, chopped

Mix well, then add:

1 1/8 cup    Bisquick
1/2 tsp        Pepper
1/2 tsp        Allspice
1/2 tsp         Dill [seed or weed]

Mix well. Hand squeeze excess water from fish, then place on paper towel and blot. Put fish in batter, cover and refrigerate about 1 hour. Deep fry fish between 350 and 400 degrees. ENJOY!!!
