Season trout with salt and pepper. Place in buttered casserole and sprinkl the juice of one lemon and half a cup of white wine over the trout (Champagne can be used in place of white wine if desired). Cover and bake in moderate oven at 350 for 15 minutes. Pour half a cup of heavy cream over the fish and place under broiler until sauce is brown. Keep broiler door open and watch carefully. Serve hot.
