My Favorite BBQ Sauce


3 small cans tomato sauce
1/4 onion, minced fine
1/2 C. brown sugar
1 tsp. black pepper
1/2 tsp. mustard powder
1 tsp. salt
1 T. molasses
1 T. corn syrup
1/4 tsp. Cayenne pepper
1 tsp. garlic powder
2-3 tsp. liquid smoke
Mix all ingredients in a medium sized pot, and simmer for 1 hour. If sauce thickens, add a little water or some Jack Daniel's to it.




Country Cowboy Pudding


Ingredients:
1 1/2 cups brown sugar
1 1/2 cups hot water
1 cup flour
1 tsp baking powder
1/4 tsp salt
1/4 cup sugar
1/2 cup milk
1/4 cup melted margarine
1/2 tsp vanilla
1/2 cup sliced dates
1/4 cup chopped nuts
Combine brown sugar and hot water and stir to dissolve sugar. Heat to boiling and pour into 1 1/2 quart baking dish. Combine dry ingredients, gradually add melted butter and milk to make smooth batter. Add vanilla, dates and nuts. Drop batter from spoon into hot syrup. Bake at 375F for about forty minutes.




Baked Ham Polynesian


4 slices pineapple
3 Lg. sweet potatoes
3 red apples
1 ham slice, 1" thick
1 C. pineapple juice
2 T. brown sugar
2 T. butter

Cover bottom of casserole with pineapple slices. Peel & slice sweet potatoes lengthwise; place on pineapple. Core and slice apples crosswise; place on potatoes. Place ham slice on top. Pour pineapple juice over all. Bake, covered at 300F for 2 hours. Remove from oven; sprinkle with brown sugar & dot with butter. Broil until browned.

This recipe is time consuming and probably shouldn't be done if you're in a hurry :) I find it goes great with rice dishes!!
