POTATO OMELET
3 eggs, separated
3 tablespoons cream or milk
1 cup mashed potatoes
1 teaspoon salt
1/4  teaspoon pepper
Onion juice
Chopped parsley
Butter


Add egg yolks and cream to potatoes and beat until smooth.
Season to taste with salt, pepper, onion juice and chopped parsley.
Beat whites until stiff.  Fold into potato mixture.  Place in buttered skillet and bake in moderate oven (350* degrees) until brown.  Fold and turn onto a hot platter.
Serve at once
