Grilled Stuffed Portobello Mushrooms 1 tbsp. Olive Oil: 1 cup yellow onion, diced 1 cup yellow bell pepper, diced 4 cups fresh arugula or spinach 1 cup tomatoes, chopped 2 tsps. garlic, minced 1 tsp. crushed red pepper flakes salt to taste 1 1/2 cups mozzarella (not fresh mozzarella), cubed 1/2 lb. Italian sausage, cooked minced 6 portobello mushroom caps, (4\" diameter) stemmed and gills removed grated Parmesan cheese Preheat grill to medium. Saute onion and bell pepper in oil until soft, about 5 minutes. Add arugula, tomatoes, garlic, pepper flakes, and salt; saute 1 minute. Off heat, add mozzarella and cooked, minced sausage. Fill caps with stuffing; sprinkle with Parmesan. Grill until cheese melts and mushrooms cook through, 5 minutes. Makes 6 mushrooms. [Non-text portions of this message have been removed] |
