Breakfast Muffins

1 cu. oat flour

1 cu. spelt flour

1/4 cu. honey

2 tsp. bkg. powder

1/2 tsp. salt

3 tsp. ener-g egg replacer powder

1 cu. milk or substitute (we use rice milk)

1/4 cu. splenda or additional honey

2 Tbsp. margarine or oil

Mix in one of the following:

** 1/2 - 1 cup cranberries + 1 small banana (delicious!)

** 1/2 cu. apple, chopped + 1 tsp. ginger, cinnamon or allspice

** 1 cu. pitted cherries or blueberries (bb are our favorite!)

**1/2 cu. crushed drained pineapple + 1/2 tsp. grated orange peel

**1/2 cu. chopped nuts

Mix and bake at 400 dF 15 minutes. 12 regular size muffins.

(we like to add a little vanilla to these for extra flavor but sometimes I leave it out).
