MALL PRETZELS

1-1/2C         Warm water
1 pkg            Active dry yeast
2 tbsp           Brown sugar, packed
1-1/8 tsp       Salt
2C                Flour
1 C              Bread flour
2 C              Warm water
2 tbsp           Baking soda
2 tbsp           Butter, softened
2 tbsp           Kosher salt

In a large mixing bowl combine first four ingredients; ad flour and knead until dough is smooth. About 5-8 minutes.  Place in greased bowl and turn. Cover and let rise until doubled; about 1 hour.

Combine 2 C warm water and baking soda; place in a 8 inch. square pan.

After dough has risen cut into 12 pieces. Roll into pencil shapes and twist to make pretzels.  Dip into baking soda solution and place on parchment coated baking sheet.  Let rise for 15-20 minutes.  Bake at 450 degrees for 8-10 minutes.  Brush with butter and sprinkle with salt. 

VARIATIONS:  You can use cinnamon or garlic salt to sprinkle on cooked pretzels.
