| WHOLE WHEAT BREAD/ ROLL 1 cup warm water 2 T. or packages of active, dry baking yeast 2 cups very hot water 1 T. salt 1/3 c. honey 1/4 melted butter 3 eggs 7-9 cups whole wheat flour In a small bowl place the warm water. Sprinkle the yeast over the top and allow to soften. In a large bowl place the hot water, salt, honey and butter. Stir until honey and salt dissolve. When cooled, add eggs and dissolved yeast and water. Stir to combine with liquid mixture. Add enough whole wheat flour until a kneadable dough is formed. Knead for about 10 minutes. Return to a greased bowl, cover and allow to rise until it is double in bulk. Turn out and shape as desired. (I did one loaf and the rest rolls, slightly flattened for sandwich and hamburger buns.) Place on greased cookie sheets or bread pans and cover. Allow to rise until double. Bake loaves at 375* for 35 to 55 min. depending on size. Bake rolls at 400* for about 15 min. Freeze and pull out as needed. |
