SYRIAN ONION BREAD

4 Cups unbleached bread flour
1 tsp salt
2 1/4 tsp yeast
1 1/4 cup warm water, more if neccesary

Topping:
4 Tbls chopped fresh onion
1 tsp groun Cumin
2 tsp ground corriander
2 tsp mint
2 Tbls. Olive oil

Proof yeast in the water. Mix flour and salt, add yeast and knead. It is very hard to knead, so get those muscles out! Knead 8-10 min, or until smooth and elastic.

Oil a bowl, and let rise for 1 hour, or until double.
Punch down, divide into 8 equal portions. Roll out, (rolls very easily!) and place on lightly floured cookie sheet. Prick all over with a fork. Let rise for 20 min.

Combine onion and seasonings (I left out the corriander and mint.) Brush dough with olive oil, and spread onion mixture on top of each one.

Bake in 400 degree oven for 15 min. Serve warm.
