WHITE CAKE

3/4 cup shortening
1 1/3 cups sugar
1 1/2 tsp vanilla
2 1/2 sifted cake flour
3 tsp baking powder
1 tsp salt
1 cup milk
5 egg whites
1/3 cup sugar

Stir shortening to soften. Add 1 1/3 cups sugar gradually, and cream together till light and fluffy. Add vanilla.
Sift flour, baking powder and salt together 3 times. Add to creamed mixture ALTERNATING with milk, a small amount at a time. Beat after each addition till smooth. Beat egg whites till foamy. Add 1/3 cup sugar gradually, beating only till merangue will hold soft peaks. Stir merangue into batter.
Bake in two greased and floured 9 1/2 inch round cake pans at 375 for about 30 minutes..
