VEGAN LEMON POUND CAKE (DF)

2 cups of self-rising flour
1 1/3 cup of sugar
1-2 teaspoons of lemon extract
1 teaspoon grated lemon zest
1/2 cup of melted non-dairy margarine(I use Shedd's or Balance)
1 1/2 cups of water
pan spray(I use Naturally Canola)
1 teaspoon baking powder
Pre-heat your oven to 325*

Grease your loaf pan and then line the bottom with wax paper. Spray the wax paper with pan spray well. Sift your flour and Baking powder together into a bowl.Add your sugar,margarine,extract,zest and water. Mix well briefly. Pour into prepared pan.Bake for 40 minutes or until cake springs back. Turn out onto cooling rack and let cool completley before cutting.
