Multi-grain waffles (pancakes) 

2 cups buttermilk or sour milk
1/4 cup packed brown suger
1 tablespoon canola oil
2 teaspoons vanilla extract
1/2 cup old-fshioned rolled oats
2/3 cup whole-wheat flour
2/3 cup all-purpose flour
1/4 cup wheat germ or cornmeal
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
2 large eggs, lightly beaten
1/4 cup packed brown suger
1 tablespoon canola oil
2 teaspoons vanilla extract

1. Mix buttermilk and oats in meduim bowl; let stand for 15 min.
2. Whisk whole-wheat floyr, all-purpose flour, wheat germ (or cornmeal), baking powder, baking soda, salt and cinnamon in a large bowl.
3. Stir eggs, sugar, oil, and vanilla into the oat mixture. Add to the wet ingredients; mix untill just moistened.
4. Spoon enough batter to cover 3/4 of the surface of the waffle iron. Cook untill waffles are crisp and golden about 4-5 minutes.

you can also use this batter for pancakes. They are sweet, and it is almost too sweet with maple syrup.I actually ate them with just a little butter. My husband had some jam. The kids wanted the syrup thoug. I got this recipe from a magaize called Eating Well, the Spring 2003 issue. They also have some different toppings in there. Working on converting them to FG.
