NO MOO MASHED POTATOES

2-1/2 #       Idaho potatoes, peeled & cubed
2 tbsp         Olive oil
2 tbsp          Flour
1 C             Chicken broth
1 tsp            Salt
1/2 tsp         White pepper

Cover potatoes with water in large pot. Bring to boil; boil for 20-30 mintues or potatoes are fork tender. While potatoes are boiling;   Heat oil in small pan, stir in flour and simmer for a minute or two. 
Add broth to flour mixture stirring until thick; seasoning. set side.  Drain potatoes and with an electric mixer mix dry potatoes until thoroughly smashed.  Add broth mixture and mix until fluffy.
