STAGE 2 CHILLI CHEESE FRIES

4 medium potatoes
olive oil
1- 1 1/2 lbs lean ground beef
1 can contadina tomato paste
1 jar Pace thick & chunky picante sauce
1 small diced onion (I like to use Vidalias)
approved garlic and chili powder to taste
shredded (you can use your food processor)approved cheddar and monterey jack cheese


cut potatoes into fries or wedges, drizzle with olive oil and toss, spread onto baking sheet and bake at 400* for 15 - 30 minutes (depending on how thick you cut the fries)

brown ground beef and diced onion in pan, add tomato paste and Pace picante sauce, add enough water to preferred consistency.

add garlic and chili powder to taste.

To serve: spoon fries on plate, spoon chili mixture over fries, top with shredded mixed monterey jack and cheddar cheese. Microwave for 30 seconds to melt cheese if needed.
