VEGGIE MUSHROOM STIR FRY WRAPS

Ingredients: 1/4 cup of rice vineger
1Tablespoon dry mustard
2 teaspoons of sesame oil
2 Tablespoons Soysauce
2 Tablespoons sugar
2 Tablespoons of water
2 Tablespoons of cornstarch
1 Tablespoon of peanut oil(I substituted olive oil)
1 pound of quarted mushrooms(I used baby portabella)
1 zucchini chopped finely
1 bunch scallions cut into 2-inch pieces
1 cup of chopped snow peas
3 Tablespoons of peanuts(I omitted this,we don't like crunchies in our food)
1 1/2 cups of cooked brown rice
10 Azteca flour tortillas


In a small bowl combine the 1st 5 ingredients. In another bowl combine the water and cornstarch.Heat your pan and put in your peanut/olive oil. Stirfry your mushrooms until they are soft.Add your zucchini and fry for 3 minutes.Add your scallions and fry for 2 minutes.Stir in your sauce mixture and snow peas.Stir well and then make a well in the middle of the mixture and add your cornstarch/water mixture.Stir till thick on low. Serve in your tortillas with the brown rice and roll any way you like them.Enjoy!!!!!Sheila
