| SWEET &SOUR VEGGIES You need chopped fresh veggies, whatever you have on hand. We like peapods,onion slices,chunky mushrooms,miniature corns,water chessnuts,bambooshoots,thin sliced carrots,celery, you can put your own favorites in. This is a very flexible dish and if you eat meat you can also add chicken or pork. Saute your veggies in water and a little soysauce. Add some fresh(I use about 1T)minced garlic and some powdered ginger. When your veggies are crisp add a can or two(depending on how many veggies you decide to use)of chunk pineapple with it's own juice.Add the juice also. Put in a little rice vineger,some brown sugar and a little more soysauce. Simmer for about 5 minutes. In a cup take about 2T of cornstarch and some water(about 1/2 cup)and stir until mixed. Then add it in your veggies and mix until thickened. Serve with rice(I use Esthers fried Rice Recipe without egg) Like I said this is a fly by the seat of your pants recipe and the measurements are done by the eye and taste. This was the 1st time I made this recipe and would change a few things. We don't like our sauces overly sweet so I would only add a 1/2 can of the pinneapple juice the next time and not any of the pinneapple chunks. |
