COCONUT CABBAGE

1 head of small cabbage- sliced thin almost shredded
1/2 onion- sliced thin
1/2 tsp dry mustard
1/2 cup fresh shredded coconut
1 Tb of oil
Salt to taste

Direction:
I) In a large pan put oil and dry mustard. Cook over medium heat. You will begin to hear the mustard seeds make a popping noise.
2) Add the onions and saute for 5-7 minutes.
3) When the onions begin to cook, add the shredded cabbage. Do not add water since the cabbage will give off a lot of water itself. Cover tightly and check occassionally. Cook on low.
4) When the cabbage is almost cooked, add the fresh coconut
5) Salt to taste.
