YAM BROULEE

4 lbs. sweet potatoes or yams (about 5 medium)
1 can crushed pineapple drained
1/2 C maple syrup (more or less to taste)
1 tsp ginger (I used 1/4 tsp nutmeg)
5 oz. marshmallows (we made the marshmallows from the FG binder and used about half of the batch for this recipe. I cut them to a little bigger than the store bought mini marshmallows.

Bake the sw. pot. or yams 45 mins - 1 hr (or nuke about 5 minutes) and scoop out the pulp. Mash well and add the pineapple (I used only 1/2 of the 15 oz. can - personal preference.), syrup and ginger (or nutmeg). Spoon into baking dish. I used a ceramic deep dish pie pan. and top with marshmallows. Brown 1 minute under the broiler - watch it carefully!

We made the mashed sweet potato mixture ahead and microwaved them without the marshmallows for about 2 minutes. Then topped with the marshmallows and broiled them after we had taken out the Thanksgiving turkey..
