| SPICY VEGGIE QUESADILLAS 2 Tbsp. olive oil (or spray with oil pump) 1 small zucchini, chopped 1/2 c chopped onion 2 cloves garlic, minced 1/2 tsp. ground cumin 1/2 tsp. black pepper 1/8 tsp. crushed oregano 8 (6-inch) flour tortillas 1c (4 ounces) shredded yellow cheese 1. Spray large nonstick skillet with spray or coat with oil. Heat over medium heat until hot. Add zucchini, onion, garlic, spices; cook and stir 3-4 minutes or until vegetables are crisp-tender. Remove veggies and set aside; wipe skillet clean. 2. Spoon veggie mixture evenly over half of each tortilla. Sprinkle each with cheese and fold each tortilla in half. 3. Spray same skillet and add tortilla and heat 1-2 minutes or if you need a lighter dish, place tortillas in a microwave dish and heat on high for 1 minute. Cut into thirds before serving. |
