FRUIT TOPPING

Blend 2 to 3 Tbsp. arrowroot powder (or cornstarch) into 2.5 to 3 Cups unsweetened, crushed or pureed fruit (fresh; or canned & drained. Add 1 to 3 tsp. of honey & 1 tsp. ground cinnamon to taste. Cook in 1.5 quart pan on stove top for 5 to 7 minutes, stirring constantly, until fruit mix thickens. This is delicious served warm over toast, pancakes, or waffles.
Alternative versions:
If you need to make this with frozen fruit, you will need to thaw the fruit & heat it slowly with 2 Tbsp. water. After fruit is warm, mix 3 Tbsp. arrowroot with 1/4 C. cold water & stir into the fruit. Cook (as above) until thickened. You can also make a FRUIT PUDDING by adding 1 Cup of fruit chunks before cooking as directed above & may serve this cold or warm.
