| MOMS BIRD STUFFING First cut up two homemade loaves of bread into cubes and put in your roasting pan. Leave it there overnight so that the cubes get slightly stale. The next morning, run your fingers through the bread cubes and breath in. Get excited about whatever holiday you are about to celebrate. Now, get serious about stuffing your bird. Beat about 4 to 6 eggs. Pour over your bread cubes and mix the eggs in with your hands until all the bread is coated. Melt 2 or 3 sticks of butter and chop up an onion. Saute the onion in the butter. Add parsley, oregano, pepper, salt and whatever other herbs or seasonings you think you might like. Pour the melted butter mixture over the bread cubes. I suppose you can use a spoon but Mom always mixes this with her hands. In any case, mix up the bread cubes until they are all coated with butter and seasonings. (Caution: If you do use your hands, that butter is HOT!) That's it. Now take large handfuls and stuff it inside your bird. With any leftovers, we always pack it into balls (about the size of a baseball) and stick it around the outside of the bird to cook. Take them out when they get brown and crunchy on the outside. |
