DAIRY FREE CARROT CAKE

1-1/3C       Flour
2/3 C         Vegetable oil
3 Large     Eggs
1-1/2 C     Carrot, grated
1 C            Walnuts, finely chopped
1 C            Sugar
1-1/2 tsp    Baking soda
1 tsp          Baking powder
1 tsp          Cinnamon
1/2 tsp       Ground Cloves  ~  Stage 2
1/2 tsp       Ground Nutmeg
1/2 tsp       Allspice
1/2 tsp       Salt
Optional Additions:
1 C            Raisins  ~  Stage 2
1/2 C         Pineapple, crushed & drained


Before mixing make sure all ingredients are at room temperature.  Grease and flour 2 round  9 inch. , 2-8 inch square or 1-13 x 9 inch pan.  Preheat oven to 350 degrees.   In a large bowl mix soda, powder, flour, salt and all spices together.  Add egg, and oil; beat with mixer.  Stir in carrots, walnuts other optional ingredients.  Pour into pan(s) and bake for 25 to 30 minutes or until tootpic inserted comes out clean.

Top with favorite frosting.
