CREAM OF CHICKEN SOUP

Soup for recipes calling for cream of chicken.


1 C           Raw chicken ( 1 breast, 2 legs or thighs)
1               Small onion, sliced thin
2 C           Water

THICKENING:

2 tbsp      Flour
1/4 C       Water
                 Salt, Pepper to taste

Simmer chicken and onion in water until done. Cut up cooked chicken and through bones out.  Place chicken and broth in food processor.  Process until creamy.  Place back into pan and heat to boiling.  Mix 2 tbsp flour with 1/4 C water.   Add some boiling broth to flour mixture and stir.  Place flour mixture in pot with chicken and broth and stir well, getting all lumps out.  Cook until thick.
