| Easy Brocolli Cheese Soup
1 cup thinly sliced carrots 2 TBS. water 1 package (10 oz.) frozed brocolli (I used brocolli and cauliflower mix) 2 1/2 cups milk 1/4 cup flour 1 cup chicken broth 1/2 tsp. salt 1/4 tsp. pepper 1 cup shredded cheese (I used Cabot X-tra sharp cheddar and it was fantastic!) In 2 Qt. microwave safe dish, combine carrots and water. Cover and cook on high for 3 minutes; stir. Cover and cook 3 minutes more or until tender. Add brocolli. Cover and microwave 3 minutes; stir. Cover and cook 1 1/2 to 2 minutes longer or until vegies are tender. Stir in milk. In a small bowl, combine the flour, chicken broth, salt and pepper; whisk until smooth. Pour over brocolli mixture. Cover and microwave on high 11-13 minutes, stirring every minute or so until mixture boils and thickens. Stir in cheese until melted. Serves 4-5. |
