VICTORIO SAUCE

4       Quarts    Chopped Rhubarb
1       C            Chopped Onions
2-1/3 C             Brown Sugar
1       C             White Vinegar
2       tsp           Ground Allspice
2       tsp           Ground Ginger
2       tsp           Ground Cinnamon
2       tsp           Salt

Cook rhubarb, onion, brown sugar, vinegar until thick, about 25 minutes.  Add spices and cook another 5 minutes. 

Chunky -  Pack in jars
Smooth Version 1 - Run through food processor. 
Smooth Version 2 - Run through a strainer.

Place in hot, clean jars, process in water bath for 15 minutes.
