PEAR PUDDING PIE

3 cups rice milk
1/2 cup + 1 TB cream of rice
pinch salt
1/2 tsp fresh ginger, or 1/8 tsp ground ginger
1/3 cup shredded coconut (optional)
1/2 cup maple syrup (honey should be fine)
5 pears (Bartlett, D' Anjou, Bosc or Comice)

1.Preheat oven to 350�F.
2.Measure all ingredients.
3.Peel and slice the pears into a baking dish and set aside.
4.Heat the milk almost to a simmer. Slowly add cream of rice or wheat, whisking as you add. Add salt and ginger, and coconut if desired. Simmer on low heat for about 2 minutes.
5.Stir in the maple syrup and pour the mixture over the pears, spreading to even it out, if necessary. Bake for 20 minutes or until the pears are tender.
