PERSIMMON PUDDING

1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp freshly grated nutmeg
1/4 tsp salt
3 ripe persimmons, pureed
1 cup sugr
3 eggs
1 cup buttermilk
1/2 cup whipping cream
1/2 cup butter, melted and cooled

Preheat the oven to 350F
Butter a 10 inch baking pan or oven proof dish.
Sift together flour, baking powder, baking soda, cinnamon, nutmeg, and salt; set aside
In a large bowl combine puree, sugar, eggs, and buttermilk; bet until smooth and creamy. Add cream and melted butter and beat again until smooth.
Fold into sifted flour mixture and pour batter into prepared pan. Bake until set (about 1 hour). The pudding will settle upon standing.
Serves 8 or 10
