JAMACIAN JERK PORK SANDWICHES

Makes enough for two pounds of pork tenderloin

2-3 t. sugar
1 1/2 t. onion powder
1 1/2 t. allspice
1 t. black pepper
1/2 t. salt
1/4 t. nutmeg
(Adjust seasonings to personal preferences and sensitivities.)

Make slices in the pork tenderloin without cutting all the way through.
Rub mix over and between cuts in the pork tenderloin.
Bake at 325 degrees F. until center of pork reaches 170 degrees F. (I use my convection oven to roast the meat.)

Meanwhile, make a lime and mayonnaise sauce:
1/2 cup of mayo
1 T. fresh lime juice
can add onion flakes and garlic
Blend with a fork and chill.
