Brown sugar pop tarts  

Sugar Cookie:
1-1/2 C powdered sugar
1 C butter, softened
1 tsp. vanilla
1 egg
2-1/2 C flour
1 tsp. b.soda
1 tsp. cream of tarter
sugar
Cream sugar, butter; add vanilla and egg.  Beat in soda, tarter and flour.  Chill at least 2 hours.  Roll 1/2 of batter on floured surface 1/4 inch thick.  Cut out out shape of pop tart or biscuit cutter.


Filling:

1 C. B. sugar
2 T. Corn starch
1 t. all spice (you could use cinnamon for a more authentic taste.)
1/2 cup water
1 cup flour

Combine first three ingredients, then add water. Bring to a boil, gradually add in flour with a whisk, continue to boil until thick. Remove from heat.

I put about 2 tsp. of filling between cookies, pressed the edges and baked at 350 for 10-12  minutes. You might want to wet the edges to make it stick better.
