| Perogies...
Dough: 2 cups of unbleached flour 1/2 teaspoon salt 1/2 cup of warm water Combine the flour,salt and water.Knead until smooth,adding small amounts of water if needed. Filling: 4 large potatos peeled and cut into chunks 1 onion diced 1 clove garlic minced 1 teaspoon parsley 1/4 cup to 1/2 cup of Rice or Soy milk 1/2 teaspoon salt 1/2 teaspoon black pepper Boil potatoes until tender.Drain.Saute yoour onion and garlic in a tiny bit of water.Then mash your patatos with parsley,milk,salt and pepper.Then add sauteed onion/garlic to mixture. Assemble:Roll out your dough on floured boared or counter till 1/8 inch thick. Cut into 3 inch cirles using a buscuit cutter or the rim of a glass.Place 1 Tablespoon of mixture in center of circle.Fold ove forming a semi-circle.Press edges together using the ridges of a fork and a little water if neccesarry.Boil perogies a few at a time in boiling water.When they float to the top they are done.I fry them in hot oil and serve them with sourcream.
