CREPES W/CREAM CHEESE & JAM

1 1/2 cups flour
1 Tbs sugar
1/2 tsp baking powder
1/2 tsp salt
2 cups milk or rice dream (both work well)
2 eggs
2 Tbs melted butter or oil (both work well)
1/2 tsp vanilla

Mix flour, sugar, baking powder and salt. Stir in remaining ingredients. Beat with hand beater or whisk until mostly smooth. Lightly butter or oil nonstick skillet. Heat over medium heat. pour 1/4 to 1/3 cup batter into skillet, immediately rotate skillet until thin film covers bottom.

Cook until lightly browned. Run spatula around edges to loosen. Turn over and cook other side until lightly browned. While cooking the first crepe, soften 4 to 8 oz. cream cheese in a bowl in the microwave (20-30 seconds).

When first crepe is ready, spread a spoonfull of cream cheese down the middle (burrito style) then spread a spoonful of jam and or fresh cut up fruit down alongside it. Roll it up like a burrito. Sometimes I sprinkle confectioner's sugar on top if I can get to it before they eat it. These go very fast. My 8yo Ds usually eats 4 or 5 of them. Some people have two skillets going to keep up with demand! This recipe is from Betty Crocker. It's easy as pancakes. Enjoy! BTW, once in a while, the crepe will break when turning it over, we toss them out because they will never come out right. Just keep making new ones
