usually only make them on weekends as I'm a payroll mom during the week. Even though there is lots of sweetening, my DS does fine with these.
Any pancake recipe will do. When the cake is on the griddle, drop a few Ghiradelli choc. chips in each one before you turn. Adding to the mix ahead of time doesn't work; they sink to the bottom.
When ready to serve, spread peanut butter on each pancake. Add hot syrup and it's like eating dessert for breakfast.
I make my syrup from 1/2 cup Maple syrup, 1/4 cup honey, and tablespoon butter. Heat in microwave.
