Zucchini Pancakes  

4 small zucchini
2 whole eggs, slightly beaten
1/4 cup flour
salt and pepper to taste
oil or shortening for cooking

Cut off ends of zucchini but do not peel. Grate coarsely. Add eggs and flour and mix well. Season with salt and pepper. Fry in a skillet with a small amount of oil or shortening, pancake size, until brown on both sides.
