GF PANCAKES

1/4 cup soy flour
1 1/4 cups brown or white rice flour
1 TBs corn-free baking powder
1 TBs sugar
1 egg or egg substitute
1/4 cup vegetable oil
1/4 tsp salt (optional)
1 1/2 cups soy milk, water or regular milk (I use vanilla flavored soy milk)


Mix dry ingredients.
Add liquid ingredients and mix well.
Cook on greased pre-heated griddle on medium heat.
Allow to rise and cook slowly, only turn once or they will flatten out.
