| HONEY NUT PANCAKES 1-1/2 cups whole wheat flour 2/3 cup chopped pecans (or any nut) 1/2 tsp. salt 1-1/2 tsp. baking powder 2 eggs 3 T. honey (heated till runny) 3 T. butter, melted 1-1/4 c. milk Mix up dry and wet ingredients separately then combine the two mixtures, using as few strokes as possible. Adjust thickness of batter as desired. Bake on hot griddle or skillet. Makes about 14 4 inch pancakes. Great with Aunt Cathy's Incredibly Delicious Syrup. These are very filling, maybe because of the extra protein from the nuts. My children liked them, but didn't eat as many as usual. (Only about 4 each...LOL) I doubled the batch and had a breakfast's worth to tuck in the freezer. |
