PECAN PIE (NO CS)

3 eggs
2/3 cup sugar
1/2 teaspoon salt
1/3 cup butter, melted
1/2 cup honey
1/2 cup simple syrup (recipe below)
1 cup pecan pieces
1 9" pastry lined pie shell (see oil crust in the 2 week recipe book)

Preheat oven to 375F.
1) In a small saucepan heat 1/2 cup sugar with 1/4 cup water. Bring to a boil and stir until the sugar disolves. Turn off the the heat.
2) Beat the eggs, sugar, salt, honey, and simple syrup with a hand beater.
3) Stir in the pecans, until mixed well.
4) Pour into aa pastry-lined pie crust.
5) Bake until set (approx. 40-50 minutes)

Serve warm with ice cream, or cold.
