CARROT MUFFINS (WF)

1/3 cup honey
2 eggs
1 Tbs. vegetable oil
1 tsp. baking powder
3/4 tsp. salt
1/2 tsp. cinnamon (may be stage 2)
1/4 tsp. nutmeg (may be stage 2)
1 cup grated zucchini or carrot
1/4 raisins (STAGE 2 ONLY) omit for stage 1
1/4 cup chopped walnuts

Mix wet ingredients. Add dry ingredients. Pour into muffin pans with paper liners. Bake 400 degrees 20 mins.
