| WHOLE WHEAT BANANA MUFFINS 3 ripe bananas, mashed (about 2 c.) 1-1/2 tsp. vanilla extract 1 egg, beaten 1/4 sugar 1-1/4 c. whole wheat flour 2 tsp. baking powder 2 T. melted butter Combine bananas, vanilla, egg and sugar in a large bowl and mix well. Sprinkle dry ingredients on top and mix lightly. Add melted butter and mix just until moistened. Fill muffin cups with batter (I use an ice cream scoop). Bake at *325 for 15 min. or until done. They don't really brown, so test with a toothpick if you are unsure. Serve with yogurt, butter or peanut butter and cinnamon sugar. Yogurt or pb make a complete protein with these muffins. I like to double this and freeze the leftovers. When I double, I substitute a heaping T. of soy flour and a T. of water for 1 egg. I think it makes a nicer texture. |
