| Gluten free muffins/biscuits
1 cup rice flour (I make my own by whizzing brown rice in the coffee grinder until it's a fine powder) 1/4 cup tapioca flour (again, I make my own by grinding tapioca pearls in the coffee grinder) 1 tsp baking powder 1/2 tsp salt 1 TBSP sugar 1 egg 2 TBSP oil 1 cup milk, rice milk or soy milk (I used vanilla flavored rice milk) 1/4 cup semi-sweet chocolate chips (optional) Preheat oven to 375. Mix together flours, baking powder, salt and sugar. Beat in egg. Stir in oil and then milk. Stir in chocolate chips. Spoon into greased muffin tins and bake 20 minutes. DO NOT OPEN OVEN TO CHECK ON THEM! I did that and they flopped in the middle the first time I made them. |
