Banana-Pineapple Muffins  
makes 12 muffins

1-3/4 all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/4 cup butter (room temperature)
3/4 cup granulated sugar
1 egg
1 teaspoon pure vanilla extract
1/4 cup drained curshed pineapple
3/4 cup mashed ripe bananas

1. Preheat oven to 425 degrees F

2. In a mixing bowl, sift together flour, baking powder, baking soda, and salt. Set aside.

3. In a second mixing bowl, beat butter until creamy and gradually add sugar. Beat until light and fluffy. Add egg and vanilla and beat well.

4. Add half flour mixture, bananas and pineapple and blend well. Add remaining flour mixture and mix.

5. Place muffin papers (or whatever FG approved method you use) into muffin wells and spoon batter into muffin tins. Bake for 20 minutes or until lightly brown.
