APPLE AND SPICE MUFFINS (GF/YF)
1 3/4 cup quinoa flour
1/4 cup tapioca flour
2 teaspoons baking soda
1/2 teaspoon unbuffered Vitamin C crystals
2 teaspoons cinnamon
1 1/2 cup peeled and chopped apples
1 cup unsweetened applesauce
1/4 cup apple juice concentrate, thawed
1/4 cup oil (cold-pressed)

Mix the dry ingredients together and stir the chopped apples into them.
Mix
together the applesauce, apple juice and oil and add them to the dry
ingredients, stirring until just mixed. Put the batter into an oiled and
floured muffin tin (or use paper liners) filling each tin 3/4 full. Bake
at
375 degrees for 20-25 minutes. Makes about 16 muffins.
