PEPPERMINT STREUSEL MUFFINS

Muffin:
1-                 Egg
1/2 C           Milk
1/4 C           Salad oil
1/2 tsp         Salt
1-1/2 C        Flour
1/2 C           Sugar
2 tsp            Baking powder

Streusel:
1 tbsp          Butter, softened
1-1/2 tbsp    Sugar
1-1/2 tbsp    Crushed peppermint candy
2 tbsp           Flour



Preheat oven to 400; grease muffin tins.  Mix all wet together and add dry; mix well.   Mix streusel with a fork until crumbly.  Fill each tin 1/3 full; sprinkle one tsp of streusel on top of each muffin.  Divide batter between each muffin cup and top with streusel.  Bake for  15-20 minutes.  Cool on rack.
