This isn't as easy as the "just add water" mixes, but it's a lot cheaper than Aunt Jemimas. You could *probably* use powdered milk, dry eggs substitute and crisco to make a just add water mix, but I haven't tried it. This makes about 8 batches of waffles.
Waffle Mix
1 5-lb bag unbleached white flour
1/2 cup + 3 T baking powder
5 tsp salt
3/4 cup sugar
Mix together well and store in air tight container. To make waffles:
2-1/3 cups mix
2 eggs, lightly beaten
1/3 cup oil
1-1/2 cups milk
Mix together and bake in waffle iron. You could make pancakes by reducing the oil and increasing the milk a little.
